Shakshuka

Shakshuka is a Mediterranean classic, a deliciously hearty breakfast packed with protein.
The ingredients are cheap and it’s an easy and quick meal to fix.
Grocery list:
- 1/4 medium red pepper
- 1/4 medium onion
- 1 tbsp EVO oil
- Paprika
- Cumin
- Cayenne pepper
- 1 tin of chopped tomatoes
- 1/2 tbsp tomato purée
- 2 large whole eggs
- 50g natural Greek yogurt
- 2 slices of sourdough toast
- Parsley
Start by finely dicing the onion and pepper, sweat them in a non-stick pan with a pinch of salt and cook until fragrant.
Purée the garlic and add it together with the spices, then stir until the flavours are combined.
Now that the base is ready, add the tin tomatoes and the tomato puree, simmer until thickened.
In the meantime, crack the eggs into a bowl and slowly add them to wells previously made into the sauce. Cover with a lid and poach the eggs until the white is cooked but the yolk is still runny.
Serve into a bowl with yoghurt and toast, a drizzle of olive oil and garnish with parsley.
